Answer:
Tell her to fill out her affidavit online, print it, take it to the nearest
check cashing store for a notary stamp, and then let her overnite it to you.
If she or her dad has the money, that would help and be there in time. :)
The interview usually gives you plenty of time, anyway, I think.
You fiance is ALWAYS the Affidavit of Support sponsor, both now, and
when filing at AOS.

Yes the US Fiancée has to supply an affidavit of support regardless of
whether or not they are financially able to support the foreign
fiancée/spouse.
Regardless she should make one out with a note of explanation that she is
currently a non-working student and her father is providing a separate I-134
on your behalf. It will be similar to what you will need to do with the
I-864 when you file for the adjustment of status.
